Something I love to do is look at food blogs and get dinner ideas or yummy dessert ideas. So I found this super easy chicken recipe (because we love chicken and always have it in the house). So I decided to try it last night.
I wish I could remember where I found the recipe, but I can't. So whoever I stole it from (sorry I don't remember who you are)...but, thank you for the recipe. It was very good! And easy!
Here it is:
Spinach Chicken Ring
(Please ignore my disgusting cookie sheet. Sorry.)
1 can (10 oz.) chunk white chicken, drained and flaked
1/2 cup red bell pepperchopped
1 pkg (10 oz.) frozen chop spinach, thawed & well drained
1 cup shredded cheddar cheese
1/3 cup mayonnaise
1 tsp. lemon zest (I don't have this so I used a little lemon juice)
1/2 tsp. salt
1/8 tsp. ground nutmeg (and skipped this part too)
2 pkg. refrigerated crescent rolls
Flake or shred chicken. Add chopped bell pepper, spinach, cheese and mayo, lemon zest, salt and nutmeg.
Unroll crescent dough; separate into triangles. Arrange triangles in a circle with wide ends overlapping in the center and points toward the outside. Scoop chicken mixture evenly onto widest end of each triangle. Bring outside points of triangles up over filling and tuck under wide ends of dough at center. Filling WILL NOT be completely covered.
Bake in a preheated 375F oven for 20-25 min. or until golden brown.
Then enjoy the yummy goodness of it while sitting on your couch with a blanket watching American Idol and having your cat sit on the floor BEGGING for you to drop something...or however you please. :) That just seems to be the norm in my household.
**So I just realized reading back the recipe that I only used 1 can of crescent rolls instead of 2. Whoops. Well it still worked. Just imagine in the picture above a little more breading on there. My bad. **
